Ingredients

  • 225 g self-raising flour
  • 1 tsp baking powder
  • 50 g butter
  • 30 g brown sugar
  • 1 egg
  • 75 ml milk
  • 250 g whipped cream
  • 200 g fresh strawberries sliced

Method

  • Step 1
    Preheat oven to 220C and line a baking tray.
  • Step 2
    Sift flour and baking powder together in a bowl. Cut up butter and rub through flour until it resembles breadcrumbs.
  • Step 3
    Stir in brown sugar.
  • Step 4
    Whisk together milk and eggs and stir through flour mixture and knead until dough is smooth.
  • Step 5
    Roll out dough to approximately 1.5 cm and using a 6 cm cookie cutter cut out circles.
  • Step 6
    Gather trimmings and re-roll and cut until you have 8 circles.
  • Step 7
    Place rounds on baking tray and bake for approximately 15 minutes or until well risen and golden.
  • Step 8
    Allow to cool completely. Slice in half and fill with cream and strawberries.

Recipe Notes
Any sliced fruit or fruit jam can be used for filling. Use sweetened whipped cream.
