Makes a nice change from regular scones
Ingredients
- 225 g self-raising flour
- 1 tsp baking powder
- 50 g butter
- 30 g brown sugar
- 1 egg
- 75 ml milk
- 250 g whipped cream
- 200 g fresh strawberries sliced
Method

Step 1Preheat oven to 220C and line a baking tray.

Step 2Sift flour and baking powder together in a bowl. Cut up butter and rub through flour until it resembles breadcrumbs.

Step 3Stir in brown sugar.

Step 4Whisk together milk and eggs and stir through flour mixture and knead until dough is smooth.

Step 5Roll out dough to approximately 1.5 cm and using a 6 cm cookie cutter cut out circles.

Step 6Gather trimmings and re-roll and cut until you have 8 circles.

Step 7Place rounds on baking tray and bake for approximately 15 minutes or until well risen and golden.

Step 8Allow to cool completely. Slice in half and fill with cream and strawberries.

Recipe Notes
Any sliced fruit or fruit jam can be used for filling. Use sweetened whipped cream.
