The kids will love these party pies with tomato sauce.
Ingredients
- 1 red onion small diced
- 500g beef mince
- 1 tbs plain flour
- 3 cups beef stock (liquid)
- 4 sheets puff pastry
- 1 egg lightly beaten
Method

Step 1Grease and heat a large frypan, then add onion, stir until onion has softened. Add minced beef and continue cooking, stirring, constantly until mince is browned all over.

Step 2Blend flour with ¼ cup of the stock in a jug to form a smooth paste, then stir in remaining stock.

Step 3Add stock mixture to pan and continue stirring until mixture boils and thickens, simmering for 1 minute. Remove from heat and season to taste with salt, pepper, mixed herbs, etc. Cover and cool.

Step 4Cut 15 x 8cm rounds from slightly thawed pastry sheets. Press rounds into greased muffin pans. Spoon cool meat filling into pastry cases and brush edges of pastry with beaten egg. Cut 15 x 7cm rounds from remaining pastry sheets. Place pastry rounds over filling, pressing edges to seal.

Step 5Brush tops with egg, then cut a slit in the centre. Bake in a 220C preheated oven for 12-15 minutes until pies are puffed and golden.
Recipe Notes
You can use beef stock cubes for the beef stock.
Filling can be made the day ahead.
