A bite-sized Christmas cake, which is easy to fit in even after Christmas pudding!
Ingredients
- 1/2 cup apple juice
- 375 g mixed fruit
- 1/2 cup dried apricots finely chopped
- 100 g butter
- 1/3 cup brown sugar
- 1/2 cup self-raising flour sifted
- 1 egg
- 100 g slivered almonds
- 1 tsp mixed spice
Method

Step 1Soak fruit in warmed apple juice for 30 minutes. Add brandy after warming if using a mixture.

Step 2Cream butter and sugar, add egg and then rest of the ingredients. Mix well.

Step 3Grease a mini muffin pan and fill each hole with cake mixture.

Step 4Bake at 160C for about 20 minutes.
Recipe Notes
I have often extended the recipe by doubling the flour, adding another egg and a handful of extra sultanas and currants.
Instead of 24 I get about 40 for not much extra cost and without compromising the end result. Brandy can be used with apple juice.
