Ingredients

  • 1/2 cup apple juice
  • 375 g mixed fruit
  • 1/2 cup dried apricots finely chopped
  • 100 g butter
  • 1/3 cup brown sugar
  • 1/2 cup self-raising flour sifted
  • 1 egg
  • 100 g slivered almonds
  • 1 tsp mixed spice

Method

  • Step 1
    Soak fruit in warmed apple juice for 30 minutes. Add brandy after warming if using a mixture.
  • Step 2
    Cream butter and sugar, add egg and then rest of the ingredients. Mix well.
  • Step 3
    Grease a mini muffin pan and fill each hole with cake mixture.
  • Step 4
    Bake at 160C for about 20 minutes.
Recipe Notes

I have often extended the recipe by doubling the flour, adding another egg and a handful of extra sultanas and currants.

Instead of 24 I get about 40 for not much extra cost and without compromising the end result. Brandy can be used with apple juice.
