Ingredients

  • 1kg beef steak, cubed
  • 3 tbs oil
  • 500g chat potato, cubed
  • 250 g pickling onion, quartered
  • 1/2 cup massaman Thai curry paste
  • 800 ml coconut cream
  • 1 tbs tamarind concentrate
  • 160 ml hot water
  • 3 tbs palm sugar

Method

  • Step 1
    Brown the meat in batches. Remove and lay on paper towels to absorb moisture.
  • Step 2
    Saute the potato and onions. Remove
  • Step 3
    Add curry paste. Cook, stirring, for one minute.
  • Step 4
    Stir in coconut and mix well. Cook until it splits and releases oil.
  • Step 5
    Add back the steak and vegetables.
  • Step 6
    Soak, then dissolve the tamarind concentrate, with the sugar, in the hot water. Add and continue stirring.
  • Step 7
    Reduce to a simmer and cook uncovered for 1½ hours.
  • Step 8
    Once the mixture has thickened, cover.
  • Step 9
    Add a small amount of water if it is too thick.
Recipe Notes

Tamarind concentrate can be substituted with juice of half lemon/lime. Brown sugar can substitute palm sugar.
