Simple and quick dish for dinner.
Ingredients
- 1kg beef steak, cubed
- 3 tbs oil
- 500g chat potato, cubed
- 250 g pickling onion, quartered
- 1/2 cup massaman Thai curry paste
- 800 ml coconut cream
- 1 tbs tamarind concentrate
- 160 ml hot water
- 3 tbs palm sugar
Method

Step 1Brown the meat in batches. Remove and lay on paper towels to absorb moisture.

Step 2Saute the potato and onions. Remove

Step 3Add curry paste. Cook, stirring, for one minute.

Step 4Stir in coconut and mix well. Cook until it splits and releases oil.

Step 5Add back the steak and vegetables.

Step 6Soak, then dissolve the tamarind concentrate, with the sugar, in the hot water. Add and continue stirring.

Step 7Reduce to a simmer and cook uncovered for 1½ hours.

Step 8Once the mixture has thickened, cover.

Step 9Add a small amount of water if it is too thick.
Recipe Notes
Tamarind concentrate can be substituted with juice of half lemon/lime. Brown sugar can substitute palm sugar.
