Ingredients

  • 1 kg lamb leg boned cubed
  • 1 onion finely chopped
  • 2 tbs garlic
  • 1/2 cup fresh mint finely chopped *to taste
  • 1 tbs soy sauce
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 pinch seasoning *to taste
  • 2 chicken stock cube
  • 100 ml olive oil
  • 2 tbs lemon juice *to taste

Method

  • Step 1
    In a large bowl, combine onion, garlic, mint, soy sauce, cumin, coriander, salt and pepper, stock cubes and oil.
  • Step 2
    Add lamb, mix well, cover and refrigerate overnight.
  • Step 3
    Soak kebab skewers in water, then place lamb onto skewers.
  • Step 4
    Cook on heated barbeque hotplate to seal then cook on grill plate over flame for the last 5 minutes.
  • Step 5
    When almost cooked, pour over lemon juice.
  • Step 6
    Serve hot.
Recipe Notes
This dish goes very well with rice, tabouleh and hummus. It is also great with chicken or beef. It can also be made into pita souvlakis - a real crowd pleaser.
