Ingredients

  • 60 g butter
  • 125 g butternut snap biscuits
  • 250 g cream cheese
  • 2 egg
  • 1 tsp lemon rind grated
  • 2 tbs lemon juice
  • 1/2 cup sugar
  • 450 g (crushed) canned pineapple well drained reserve liquid
  • 2 tsp gelatine powder
  • 2 tbs water

Method

  • Step 1
    Place butter in bowl, microwave on high for 1 minute.
  • Step 2
    Crush biscuits into crumbs. Stir biscuit crumbs into butter.
  • Step 3
    Press into pie plate, cook on high for 1 minute. Allow to cool.
  • Step 4
    Beat cream cheese then add eggs, lemon rind, lemon juice and sugar.
  • Step 5
    Add pineapple to cheese mix.
  • Step 6
    Pour into crust. Cook on medium high for 10 minutes. Allow to cool.
  • Step 7
    Sprinkle gelatine over water, cook on high for 30 seconds.
  • Step 8
    Add to pineapple juice and cool slightly.
  • Step 9
    Spread over cheesecake.
  • Step 10
    Refrigerate until set.
Recipe Notes
I use light cream cheese and sweetener to make this at least a bit lower in calories and more diabetic friendly.
