A very easy and delicious cheesecake.
Ingredients
- 60 g butter
- 125 g butternut snap biscuits
- 250 g cream cheese
- 2 egg
- 1 tsp lemon rind grated
- 2 tbs lemon juice
- 1/2 cup sugar
- 450 g (crushed) canned pineapple well drained reserve liquid
- 2 tsp gelatine powder
- 2 tbs water
Method

Step 1Place butter in bowl, microwave on high for 1 minute.

Step 2Crush biscuits into crumbs. Stir biscuit crumbs into butter.

Step 3Press into pie plate, cook on high for 1 minute. Allow to cool.

Step 4Beat cream cheese then add eggs, lemon rind, lemon juice and sugar.

Step 5Add pineapple to cheese mix.

Step 6Pour into crust. Cook on medium high for 10 minutes. Allow to cool.

Step 7Sprinkle gelatine over water, cook on high for 30 seconds.

Step 8Add to pineapple juice and cool slightly.

Step 9Spread over cheesecake.

Step 10Refrigerate until set.
Recipe Notes
I use light cream cheese and sweetener to make this at least a bit lower in calories and more diabetic friendly.
