This is the easiest tomato relish recipe I've ever made. I have been making it for years now and it's still gorgeous. Great for sandwiches, also on cheese on toast under the grill. - vjstreet

Ingredients

  • 750 g tomato ripe
  • 2 onions chopped peeled
  • 1 cup white vinegar
  • 1 1/2 cups white sugar
  • 2 tsp curry powder
  • 2 tsp French mustard
  • 2 tsp salt
  • 1/4 cup cornflour
  • 1/4 cup cold water

Method

  • Step 1
    Chop tomatoes into quarters, remove core. Place in casserole dish.
  • Step 2
    Add onions, vinegar, sugar, curry, mustard and salt. Stir well.

  • Step 3
    Cover with cling wrap and microwave on High for 10 minutes.
  • Step 4
    Remove from microwave and stir. Remove skins with tongs.
  • Step 5
    Microwave, uncovered, on High for 10 minutes.
  • Step 6
    Mix cornflour and cold water until smooth and stir in well.
  • Step 7
    Microwave, uncovered, on High for 6 minutes.
  • Step 8
    Stand for 5 minutes. Stir.
  • Step 9
    Pour in into hot, sterile jars and seal when cold.

This will last in your pantry for 12 months.
