This is the easiest tomato relish recipe I've ever made. I have been making it for years now and it's still gorgeous. Great for sandwiches, also on cheese on toast under the grill.
Ingredients
- 750 g tomato ripe
- 2 onions chopped peeled
- 1 cup white vinegar
- 1 1/2 cups white sugar
- 2 tsp curry powder
- 2 tsp French mustard
- 2 tsp salt
- 1/4 cup cornflour
- 1/4 cup cold water
Method

Step 1Chop tomatoes into quarters, remove core. Place in casserole dish.

Step 2Add onions, vinegar, sugar, curry, mustard and salt. Stir well.

Step 3Cover with cling wrap and microwave on High for 10 minutes.

Step 4Remove from microwave and stir. Remove skins with tongs.

Step 5Microwave, uncovered, on High for 10 minutes.

Step 6Mix cornflour and cold water until smooth and stir in well.

Step 7Microwave, uncovered, on High for 6 minutes.

Step 8Stand for 5 minutes. Stir.

Step 9Pour in into hot, sterile jars and seal when cold.
