This cake is so versatile, with the addition of different flavourings.
Ingredients
- 2 eggs
- 150ml oil
- 150ml milk
- 150g sugar
- 5ml vanilla essence
- 1 cup plain flour
- 3 tsp baking powder
Method

Step 1Whisk ingredients together with a hand whisk.

Step 2Fold in sifted flour and baking powder.

Step 3Line a 20cm round casserole or plastic container with paper towel.

Step 4Place mixture in dish and microwave on High for 5-6 minutes. Do not overcook. The cake should still look slightly wet on the top.
Recipe Notes
To make a chocolate cake, replace 2 tablespoons of the flour with cocoa and use a teaspoon of coffee dissolved in a little boiling water.
For special occasions, I have sometimes added an extra egg and an extra third to all the ingredients to make a larger cake.
I usually make 3 layers.
