Ingredients

  • 2 eggs
  • 150ml oil
  • 150ml milk
  • 150g sugar
  • 5ml vanilla essence
  • 1 cup plain flour
  • 3 tsp baking powder

Method

  • Step 1
    Whisk ingredients together with a hand whisk.
    Microwave sponge
  • Step 2
    Fold in sifted flour and baking powder.
  • Step 3
    Line a 20cm round casserole or plastic container with paper towel.
  • Step 4
    Place mixture in dish and microwave on High for 5-6 minutes. Do not overcook. The cake should still look slightly wet on the top.
Recipe Notes

To make a chocolate cake, replace 2 tablespoons of the flour with cocoa and use a teaspoon of coffee dissolved in a little boiling water.

For special occasions, I have sometimes added an extra egg and an extra third to all the ingredients to make a larger cake.

I usually make 3 layers.
