Ingredients

  • 2 egg beaten
  • 1/2 cup tasty cheese
  • 1/4 cup milk
  • 1 tsp fresh curly parsley chopped
  • 1/2 tsp salt and pepper *to taste

Method

  • Step 1
    Whisk eggs in a microwave safe bowl, add the milk and mix gently.
  • Step 2
    Add cheese, salt and pepper and cook on high for 1 minute.
  • Step 3
    Remove from microwave, break up with either a fork or whisk and cook for another minute.
  • Step 4
    Remove from microwave and break it up again. Cook until firm enough.
  • Step 5
    Serve on hot buttery toast garnished with parsley.

Recipe Notes
Microwave temperatures vary so just keep an eye on it. Mine is a 700 watt microwave and never takes longer than 3 minutes for 1 serve. Just simply double the quantities for 2 serves. This is easy enough for my 9 year old.
