A quick, healthy and easy breakfast even the kids can make.
Ingredients
- 2 egg beaten
- 1/2 cup tasty cheese
- 1/4 cup milk
- 1 tsp fresh curly parsley chopped
- 1/2 tsp salt and pepper *to taste
Method

Step 1Whisk eggs in a microwave safe bowl, add the milk and mix gently.

Step 2Add cheese, salt and pepper and cook on high for 1 minute.

Step 3Remove from microwave, break up with either a fork or whisk and cook for another minute.

Step 4Remove from microwave and break it up again. Cook until firm enough.

Step 5Serve on hot buttery toast garnished with parsley.

Recipe Notes
Microwave temperatures vary so just keep an eye on it. Mine is a 700 watt microwave and never takes longer than 3 minutes for 1 serve. Just simply double the quantities for 2 serves. This is easy enough for my 9 year old.
