Fast, tasty way to cook corned meat without heating up the kitchen on a hot summer day.
Ingredients
- 1 1/2 kg corned beef
- 2 tbs brown sugar
- 1 onion peeled quartered
- 1/4 cup white vinegar
- 2 cup water
- 1 tsp whole cloves optional
Method

Step 1Place corned beef in a microwave dish, along with the remainder of ingredients.

Step 2Cover the dish and cook in a 700 watt microwave for 10 minutes on high power.

Step 3Turn microwave down to medium-high and cook for another 15 minutes.

Step 4Turn the meat over and cook for another 15 minutes.

Recipe Notes
Can be eaten immediately after cooking but also tastes wonderful if allowed to sit in the dish until cooled. If your microwave is a different wattage then adjust cooking times as needed. You can also cook other size pieces, just adjust times.
