Ingredients

  • 2 tbs olive oil
  • 2 onion chopped
  • 3 garlic clove chopped
  • 3 tsp Mexican seasoning
  • 1 tsp smoked paprika
  • 800 g canned chopped tomato
  • 6 cups beef stock (liquid)
  • 1/3 cup tomato paste
  • 1 1/2 cup red lentils
  • 2 tbs brown sugar
  • 1/3 cup fresh coriander chopped

Method

  • Step 1
    In a large saucepan, heat the oil and add onions and garlic. Cook until light golden.
  • Step 2
    Mix in the Mexican seasoning and smoked paprika.
  • Step 3
    Add tomatoes, stock, tomato paste, lentils and sugar.
  • Step 4
    Bring to the boil, stir, then reduce heat and simmer for 45 minutes.
  • Step 5
    Add chopped fresh coriander just before serving.
  • Step 6
    Serve with sour cream, extra chopped coriander and cheesy scones.
Recipe Notes

If you can't find Mexican seasoning, use a mix of 1 teaspoon ground cumin, 1 teaspoon ground coriander and 1 teaspoon ground black pepper.
