This tasty dish presents well and my kids all love it. You can sneak grated vegetables into it too. A lot of ingredients but they all go together well.
Ingredients
- 1 tbs oil
- 1 onion diced large
- 1 tsp garlic powder *to taste
- 800 g beef mince
- 1 celery stick diced
- 1 red capsicum diced medium
- 800 g canned crushed tomatoes
- 1 tbs tomato paste
- 800 g five bean canned mixed beans
- 600 g canned corn
- 1 1/2 cup rice
- 1 tbs ground cumin
- 1 pinch salt optional
- 1 pinch chilli powder optional *to taste
- 2 beef stock cube small
- 1 tbs white sugar
- 100 g cheese
- 200 g taco sauce
- 1 packet sour cream *to serve
- 1 packet corn chip *to serve
- 1 pinch paprika *to decorate
Method

Step 1Place oil in a large pan and cook onion until translucent.

Step 2Add celery, carrot and capsicum and cook for another minute.

Step 3Add the mince, and stir until it is broken up and browned.

Step 4Add tomato paste and tomatoes. Bring to the simmer and add 5 bean mix and corn.

Step 5Reduce heat and cook uncovered for 20 minutes, stirring occasionally.

Step 6Meanwhile, cook rice in a separate pan. Set aside.

Step 7Add cumin, salt, stock cubes and sugar to mince. Add chilli powder, if using. Cook for a further 10 minutes.

Step 8Divide drained rice among bowls. Serve mince over the rice.

Step 9Place a tablespoon of the salsa on top of the mince. Follow this with a tablespoon of sour cream.

Step 10Grate some cheese over the top. Sprinkle with a little paprika.

Step 11Arrange a handful of corn chips around the sides of the bowl.
Recipe Notes
You could leave out the rice and serve with toast instead. Leftovers are really nice over toast for breakfast. If you really wanted to go to town with the presentation, a slice or two of avocado would be nice and you could sprinkle with chopped coriander leaves instead of the paprika. The longer this cooks, the better. You can use any sort of mince.
