There's nothing easier than a Christmas cake with TWO steps: melt & mix.
Ingredients
Cake
- 500 g Sunbeam Gourmet Selection mixed fruit
- 1/2 cup Sunbeam slivered almonds
- 2 cup plain flour
- 1/2 tsp bicarbonate of soda
- 1 cup brown sugar firmly packed
- 1 tsp nutmeg
- 2 tsp ground cinnamon
- 250 g butter melted
- 3 egg lightly beaten
- 1/4 cup brandy
Method

Step 1Preheat oven 150°C. Double line a 20cm round tin with baking paper.

Step 2Combine all ingredients together and stir until combined. Spoon into prepared tin and bake for 1 hour or until skewer inserted comes out clean.
