Ingredients
- 2 potato medium
- 1 sweet potato large
- 2 parsnip medium
- 2 tbs dried parsley
- 1/4 cup milk
- 1 tbs butter
Method

Step 1Peel and dice all potatoes and parsnips into 1½ cm pieces.

Step 2Place in saucepan and cover with water.

Step 3Bring to the boil and cook until sweet potato is tender.

Step 4Drain water from saucepan. Add salt, pepper, milk and butter.

Step 5Beat with electric hand mixer, adding more milk, if necessary, to create a creamy consistency.

Recipe Notes
I usually make a surplus amount, as these will freeze and restore, just like they were freshly made, months later with only a few minutes in the microwave.
