Mashed Potato, Parsnip and Sweet Potato

Ingredients

  • 2 potato medium
  • 1 sweet potato large
  • 2 parsnip medium
  • 2 tbs dried parsley
  • 1/4 cup milk
  • 1 tbs butter

Method

  • Step 1
    Peel and dice all potatoes and parsnips into 1½ cm pieces.
  • Step 2
    Place in saucepan and cover with water.
  • Step 3
    Bring to the boil and cook until sweet potato is tender.
  • Step 4
    Drain water from saucepan. Add salt, pepper, milk and butter.
  • Step 5
    Beat with electric hand mixer, adding more milk, if necessary, to create a creamy consistency.

  • 1 electric mixer
  • 1 saucepan
Recipe Notes
I usually make a surplus amount, as these will freeze and restore, just like they were freshly made, months later with only a few minutes in the microwave.
