Ingredients

  • 1kg potato chopped peeled
  • 30g butter
  • 1/2 cup milk hot
  • 1 cup bacon rashers chopped
  • 2 spring onion sliced
  • 1 1/2 cup cheese grated

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Cook potatoes and mash with butter and hot milk.
  • Step 3
    Fry the bacon until slightly crisp.
  • Step 4
    Add half the bacon, half the spring onions and one cup of cheese to the potato mixture.
  • Step 5
    Spread into a greased, shallow dish, like a quiche dish.
  • Step 6
    Top with the remaining spring onion, bacon and cheese.

    Bake for approximately 40 minutes, or until golden on top.
Recipe Notes

You can add a small can of creamed corn to the potato mix, to make it a bit sweeter for the children.
