Ingredients

  • 6 orange quartered
  • 2 lemon quartered
  • 1 1/2 L water
  • 1 1/4 kg sugar

Method

  • Step 1
    Place fruit into a large bowl, add water then cover bowl and allow to stand over night.
  • Step 2
    Place fruit with water into a large pan, bring to the boil, reduce heat and simmer, covered, for 20 minutes or until rind is tender.
  • Step 3
    Place sugar in a baking dish and into the oven at 180C for 7 minutes.
  • Step 4
    Add sugar to fruit mixture, stir until dissolved.
  • Step 5
    Bring back to the boil, then boil, uncovered, for 25-30 minutes or until jam jells when tested on a cold saucer.
  • Step 6
    Pour into hot sterilised jars and seal.
Recipe Notes

Makes approximately 8 cups. If desired stir in ¼ cup of whisky or brandy just before bottling.
