Butterflied boned leg of lamb, marinated overnight and then barbequed.
Ingredients
- 1/2 cup mint sauce thick
- 1/4 cup apricot jam
- 1/2 cup soy sauce
- 1 garlic clove crushed
- 1 tsp ginger crushed
- 2 red chilli finely chopped small
- 1 lamb leg boned butterflied
Method

Step 1Combine all ingredients.

Step 2Massage into a boned, butterflied leg of lamb.

Step 3Leave in fridge overnight.

Step 4Cook on oiled, heated BBQ plate, until done.
