An easy beef curry for all the family.

Ingredients

  • 800 g chuck beef steak, trimmed, cut into pieces
  • 1 tbs oil
  • 1 onion finely chopped
  • 2 garlic clove crushed
  • 1 tsp grated ginger
  • 3 tbs Madras curry powder
  • 3 tbs white vinegar
  • 1/4 cup tomato paste
  • 1 cup beef stock (liquid)

Method

  • Step 1
    Add vinegar to Madras curry powder and stir to make a smooth paste.
  • Step 2
    Heat oil in large saucepan; add onion, ginger and garlic and cook over medium heat, stirring frequently, for about 5 minutes or until onion is golden brown.

    Add curry paste and stir for 1 minute or until fragrant.
  • Step 4
    Stir in meat and cook until browned all over.
  • Step 5
    Add tomato paste and stock. (Stock should just cover meat.)
  • Step 6
    Reduce heat and simmer, covered, for approximately one hour, stirring occasionally, and then uncovered for 15 minutes or until meat is tender.

  • 1 saucepan
Recipe Notes

Blade steak can also be used. Use vegetable oil or ghee
