These are so easy and so tasty. Made with Pampas Puff Pastry, they can be whipped up in minutes!
Ingredients
- 500 g lamb mince
- 200 g pumpkin grated
- 20 g fresh mint chopped
- 200 g haloumi
- 1 pinch salt and pepper
- 1/4 cup pumpkin seeds
- 1 egg beaten
- 4 sheets Pampas puff pastry
- 1 onion grated
Method

Step 1Grate pumpkin and onion and chop the mint, then add to the lamb mince. Add salt and pepper, then mix together with clean hands until combined. Slice haloumi and set aside.

Step 2Lay out 4 slices of Pampas Puff Pastry sheets and slice in half horizontally. On each of the 8 pieces of pastry make a line of meat mixture. Followed by a line of haloumi on top. Brush top of pastry with egg mixture and fold to close. Prick top with a fork and brush with egg again, then sprinkle with pumpkin seeds on top. Cut each of the the 8 rolled pieces into 6 sausage rolls.

Step 3Place on a baking tray lined with baking paper.

Step 4Bake at 180C for approximately 35 minutes, or until golden brown and meat is cooked. Times can vary with different ovens.
