Lamb Kofta with Greek Yoghurt

Ingredients

  • 700 g diced lamb
  • 1 onion
  • 2 tbs mint
  • 2 tbs parsley
  • 1 1/2 tsp ground cumin
  • 2 tbs couscous
  • 1 pinch salt and pepper
  • 1/2 cup olive oil
  • 500 ml Greek yoghurt
  • 1 tsp crushed garlic
  • 2 tsp mint chopped

Method

  • Step 1
    Process lamb in food processor until minced. Transfer to a large bowl.
  • Step 2
    Process onion, mint and parsley until finely chopped. Add cumin, coriander and lamb, and process until combined.
  • Step 3
    Place mixture back in bowl, add couscous, salt and pepper.
  • Step 4
    Divide lamb mix and, using wet hands, shape each portion into a thick sausage around metal skewers. Put kofta on a plate, cover and refrigerate for 1 hour until firm.
  • Step 5
    Mix Greek yoghurt, garlic and mint and refrigerate until serving.
  • Step 6
    Brush kofta with olive oil and then barbeque for 8-10 minutes, turning several times.
  • Step 7
    Serve with Greek yoghurt and salad.
