Yummy lamb on skewers.
Ingredients
- 700 g diced lamb
- 1 onion
- 2 tbs mint
- 2 tbs parsley
- 1 1/2 tsp ground cumin
- 2 tbs couscous
- 1 pinch salt and pepper
- 1/2 cup olive oil
- 500 ml Greek yoghurt
- 1 tsp crushed garlic
- 2 tsp mint chopped
Method

Step 1Process lamb in food processor until minced. Transfer to a large bowl.

Step 2Process onion, mint and parsley until finely chopped. Add cumin, coriander and lamb, and process until combined.

Step 3Place mixture back in bowl, add couscous, salt and pepper.

Step 4Divide lamb mix and, using wet hands, shape each portion into a thick sausage around metal skewers. Put kofta on a plate, cover and refrigerate for 1 hour until firm.

Step 5Mix Greek yoghurt, garlic and mint and refrigerate until serving.

Step 6Brush kofta with olive oil and then barbeque for 8-10 minutes, turning several times.

Step 7Serve with Greek yoghurt and salad.
