Similar to a souvlaki, this is a diabetic friendly lamb dish with salad.
Ingredients
- 1 tbs oil
- 1 onion finely chopped medium
- 1 tsp ground cumin
- 1 tsp coriander
- 1 tsp thyme
- 1 tsp basil
- 500 g lean lamb stir-fry strips
- 400 g canned chickpeas drained rinsed
- 1 vegetable stock cube crumbled
- 4 tortillas
- 4 lettuce leaves
- 1 tomato thinly sliced
- 100 g low-fat natural yoghurt
- 2 garlic cloves crushed
Method

Step 1Heat oil in non stick frying pan and cook onion, cumin, coriander, thyme and basil for 2 minutes.

Step 2Add lamb and fry until it changes colour.

Step 3Drain excess liquid and add chickpeas and stock cube. Heat until warmed.

Step 4Mix garlic with yoghurt.

Step 5Warm tortillas as per packet instructions.

Step 6Spread a spoonful of yoghurt in centre of tortilla, top with lettuce, tomato and spoonfuls of lamb and chickpea mix. Roll up to eat.
Recipe Notes
Other salad items, or a small amount of grated low-fat cheese can be added.
