Ingredients

  • 1 tbs oil
  • 1 onion finely chopped medium
  • 1 tsp ground cumin
  • 1 tsp coriander
  • 1 tsp thyme
  • 1 tsp basil
  • 500 g lean lamb stir-fry strips
  • 400 g canned chickpeas drained rinsed
  • 1 vegetable stock cube crumbled
  • 4 tortillas
  • 4 lettuce leaves
  • 1 tomato thinly sliced
  • 100 g low-fat natural yoghurt
  • 2 garlic cloves crushed

Method

  • Step 1
    Heat oil in non stick frying pan and cook onion, cumin, coriander, thyme and basil for 2 minutes.
  • Step 2
    Add lamb and fry until it changes colour.
  • Step 3
    Drain excess liquid and add chickpeas and stock cube. Heat until warmed.
  • Step 4
    Mix garlic with yoghurt.
  • Step 5
    Warm tortillas as per packet instructions.
  • Step 6
    Spread a spoonful of yoghurt in centre of tortilla, top with lettuce, tomato and spoonfuls of lamb and chickpea mix. Roll up to eat.
Recipe Notes
Other salad items, or a small amount of grated low-fat cheese can be added.
