Ingredients

  • 1 red capsicum cut into pieces large
  • 1 zucchini cut into pieces
  • 350 g diced lamb
  • 16 cherry tomato
  • 2 tbs olive oil
  • 1 tbs lemon juice
  • 1 garlic clove crushed

Method

  • Step 1
    Place bamboo skewers into a shallow dish and cover with water. Leave to soak for about 20 minutes.
  • Step 2
    Thread capsicum, zucchini, tomatoes and meat onto prepared skewers. Mix oil, lemon juice and garlic together and brush over kebabs.
  • Step 3
    Cook kebabs on a barbeque for 10-15 minutes over medium-high heat, or until meat is cooked through.

Equipment

  • 8 bamboo skewers
  • 1 barbecue
Recipe Notes
Dish may be served with some steamed rice.
