This curry can be as hot or mild as you like depending on the curry paste you use.
Ingredients
- 250 frozen spinach thawed well drained
- 2 tsp peanut oil
- 500 g lamb leg cubed
- 1 white onion finely chopped
- 4 tsp curry paste
- 1 tsp ground turmeric
- 1 tomato chopped large
- 1/2 cup coconut milk
- 1/2 tsp garam masala
Method

Step 1Heat oil in a large frying pan over medium heat and brown lamb all over. Transfer lamb to a plate.

Step 2Add onion to pan and saute until soft. Add curry paste and turmeric and cook stirring constantly for 1 minute.

Step 3Add tomato, coconut and lamb to pan. Cover and simmer for approximately 20 minutes or until lamb is tender.

Step 4Add spinach, stir well. Stir in garam masala and simmer a further 5 minutes.

Step 5Serve immediately with Basmati rice.
