Ingredients

  • 250 frozen spinach thawed well drained
  • 2 tsp peanut oil
  • 500 g lamb leg cubed
  • 1 white onion finely chopped
  • 4 tsp curry paste
  • 1 tsp ground turmeric
  • 1 tomato chopped large
  • 1/2 cup coconut milk
  • 1/2 tsp garam masala

Method

  • Step 1
    Heat oil in a large frying pan over medium heat and brown lamb all over. Transfer lamb to a plate.
  • Step 2
    Add onion to pan and saute until soft. Add curry paste and turmeric and cook stirring constantly for 1 minute.

    Add tomato, coconut and lamb to pan. Cover and simmer for approximately 20 minutes or until lamb is tender.
  • Step 4
    Add spinach, stir well. Stir in garam masala and simmer a further 5 minutes.
  • Step 5
    Serve immediately with Basmati rice.
