Lamb and Mint Risotto

I have just published my 1st cookbook and this is one of my favourite recipes I like to cook for dinner at home.

Ingredients

  • 4 lamb fillets
  • 2 cups chicken stock (liquid)
  • 1 tbs olive oil
  • 1 onion medium
  • 1/2 cup cream
  • 2 pinches salt and pepper *to taste
  • 1 garlic cloves crushed
  • 2 cups arborio rice
  • 2 tbs fresh mint chopped
  • 1 cup parmesan cheese grated

Method

  • Step 1
    In a medium saucepan over medium heat add 1 tablespoon of oil, cook onion until soft, add garlic and cook for 1 minute, stir through the Arborio.

  • Step 2
    Add the stock bring to the boil and simmer for 20 minutes until tender or liquid as absorbed.
  • Step 3
    Season lamb with salt and pepper and cook to your liking, set aside to rest, then slice.
  • Step 4
    Fold through the cream, add the lamb and mint cook until heated through, garnish with parmesan.
