I have just published my 1st cookbook and this is one of my favourite recipes I like to cook for dinner at home.
Ingredients
- 4 lamb fillets
- 2 cups chicken stock (liquid)
- 1 tbs olive oil
- 1 onion medium
- 1/2 cup cream
- 2 pinches salt and pepper *to taste
- 1 garlic cloves crushed
- 2 cups arborio rice
- 2 tbs fresh mint chopped
- 1 cup parmesan cheese grated
Method

Step 1In a medium saucepan over medium heat add 1 tablespoon of oil, cook onion until soft, add garlic and cook for 1 minute, stir through the Arborio.

Step 2Add the stock bring to the boil and simmer for 20 minutes until tender or liquid as absorbed.

Step 3Season lamb with salt and pepper and cook to your liking, set aside to rest, then slice.

Step 4Fold through the cream, add the lamb and mint cook until heated through, garnish with parmesan.
