This is a yummy, sticky and very sweet sauce that has endless possibilities. Particularly lovely with the Sticky Date Cake recipe on here.
Ingredients
- 1 cup brown sugar firmly packed
- 1 cup cream
- 200 g unsalted butter chopped room temperature
- 300 g jersey caramels chopped
Method

Step 1Combine all ingredients in a medium saucepan.

Step 2Stir over low-medium heat, without boiling, until sugar is dissolved and butter is melted.

Step 3Turn up to medium-high heat, continuing to stir until mixture starts to boil.

Step 4Turn down to a low-medium heat again, stirring over a low simmer for 15 minutes or until sauce thickens.
Recipe Notes
It is important to keep stirring this mixture so it doesn't stick to the pan. This sauce is divine on sticky date cakes or puddings. Great also on butterscotch cake and nice on ice cream with crushed nuts or chopped chocolate bars of your choice. It may take a bit of time to prepare, however has wonderful results.
