Ingredients

  • 4 egg whites
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • 1 tsp cornflour
  • 1 tsp white vinegar
  • 1 bunch fresh raspberries *to serve
  • 1 cup whipped cream *to serve

Lemon curd

  • 3 egg
  • 2 egg yolks
  • 3/4 cup caster sugar
  • 125 g unsalted butter
  • 1 lemon rind
  • 2 lemon juiced

Method

  • Step 1
    Preheat oven to 250C.
  • Step 2
    Whip egg whites until soft peaks form. Whip in sugar, gradually, until stiff peaks form and the mixture is smooth and glossy.
  • Step 3
    Stir in vanilla, vinegar and cornflour until combined.
  • Step 4
    Divide mixture into about 6 equal parts and place neatly on a baking tray lined with baking paper.
  • Step 5
    Reduce oven temperature to 160C and bake pavlovas for approximately 50 minutes or until slightly browned. Leave to cool completely in the oven.
  • Step 6
    Lemon curd: Combine eggs, egg yolks and sugar in a microwave-safe bowl.
  • Step 7
    Add lemon and cubed butter and microwave for 1-2 minutes. Remove from microwave and stir.
  • Step 8
    Repeat approximately 4 times in 1 minute microwave blasts. Refrigerate.
  • Step 9
    To serve, place a pavlova on a plate and top with whipped cream, a zigzag of lemon curd and raspberries.
