Individual pavlovas with a crispy crust and marshmallow inside. Topped with delicious lemon curd, cream and raspberries.
Ingredients
- 4 egg whites
- 1 cup caster sugar
- 1 tsp vanilla essence
- 1 tsp cornflour
- 1 tsp white vinegar
- 1 bunch fresh raspberries *to serve
- 1 cup whipped cream *to serve
Lemon curd
- 3 egg
- 2 egg yolks
- 3/4 cup caster sugar
- 125 g unsalted butter
- 1 lemon rind
- 2 lemon juiced
Method

Step 1Preheat oven to 250C.

Step 2Whip egg whites until soft peaks form. Whip in sugar, gradually, until stiff peaks form and the mixture is smooth and glossy.

Step 3Stir in vanilla, vinegar and cornflour until combined.

Step 4Divide mixture into about 6 equal parts and place neatly on a baking tray lined with baking paper.

Step 5Reduce oven temperature to 160C and bake pavlovas for approximately 50 minutes or until slightly browned. Leave to cool completely in the oven.

Step 6Lemon curd: Combine eggs, egg yolks and sugar in a microwave-safe bowl.

Step 7Add lemon and cubed butter and microwave for 1-2 minutes. Remove from microwave and stir.

Step 8Repeat approximately 4 times in 1 minute microwave blasts. Refrigerate.

Step 9To serve, place a pavlova on a plate and top with whipped cream, a zigzag of lemon curd and raspberries.
