Nachos the cheat's way with a twist.
Ingredients
- 1 tbs oil
- 500 g corn chip
- 300 g beef mince
- 1 onion chopped
- 1/2 tsp crushed garlic
- 1 packet Mexican seasoning
- 440 g canned crushed tomatoes
- 1 can refried beans
- 2 cup cheese grated
- 1 sour cream *to serve
- 1 canned corn *to serve
- 1 avocado *to serve
Method

Step 1Heat oil in a frying pan.

Step 2Place corn chips in a moderate oven for 10 minutes.

Step 3Brown mince, then remove from pan and drain fat.

Step 4Brown onion until soft. Add garlic and cook for 1 minute, then return mince to pan.

Step 5Sprinkle taco seasoning mix over mince mixture and cook for 1 minute.

Step 6Add crushed tomatoes and simmer until liquid is reduced by about half.

Step 7Add the refried or baked beans to the mixture and stir through.

Step 8Completely cover the mixture with grated cheese, and cover with a lid for about 5 minutes or until cheese has melted.

Step 9Serve in individual bowls with sour cream, corn kernels and avocado.
Recipe Notes
My kids won't eat refried beans but love baked beans which works beautifully in this recipe. I used a mixture of cheese and plain salted corn chips for this.I use taco seasoning.
