A delicious vegetable soup.
Ingredients
- 2 tbs olive oil
- 3 garlic clove chopped
- 3 chilli chopped
- 1 leek chopped
- 2 celery stick chopped
- 2 carrot chopped
- 1 zucchini chopped
- 1/2 cup butternut pumpkin chopped
- 1 bunch broccolini chopped
- 1 bunch pak choy sliced
- 1/4 cup corn cob kernels
- 1/4 cup green beans chopped
- 1L vegetable stock
- 440 g canned diced tomato
- 500 ml water
- 1 pinch salt and pepper
Method

Step 1Sweat leek, chilli and garlic in a large saucepan over medium heat.

Step 2Add vegetables, except for pak choy and broccolini.

Step 3Sweat vegetables for 2-4 minutes, and then add stock, canned tomatoes and water.

Step 4Simmer for approximately 20 minutes.

Step 5Add broccolini and pak choy a few minutes before serving.

Step 6Season with salt and pepper.
Recipe Notes
You can grate a little Parmesan cheese into it. I made Parmesan crisps to go with it! Use vegetable or chicken stock.
