Healthy fish, salad and salsa in a soft tortilla wrap.
Ingredients
- 1 mango chopped into pieces
- 2 tbs coriander chopped
- 1 lime juiced
- 4 fish fillets boned
- 6 tortillas *to serve
- 2 handfuls rocket leaves washed
- 1 pinch salt and pepper *to taste
- 1 punnet cherry tomato quartered
- 1/4 cup salsa
Method

Step 1Combine mango, lime juice and coriander. Set aside.

Step 2In a tortilla, place fish chunks and top with salsa, cherry tomatoes and rocket. Fold up and enjoy!

Step 3Pan fry fish until cooked through. Season, break into chunks and set aside.

I like to add a little avocado to my wrap and my husband likes to add a little chilli to his.
