A very yummy slice so enjoy it!
Ingredients
- 1 cup self-raising flour sifted
- 1/2 cup sugar
- 1/2 cup desiccated coconut
- 125 g butter melted
Topping
- 1/2 cup desiccated coconut
- 1/4 cup self-raising flour
- 1/2 cup sugar
- 1/2 cup sultanas
- 1/2 cup (crushed) canned pineapple drained
- 2 egg lightly beaten
Method

Step 1Preheat oven to 180C. Grease and line an 18 cm x 28 cm slice tin.

Step 2Base: In a large bowl, combine sifted flour, sugar and coconut.

Step 3Stir in the butter and press mixture into prepared tin.

Step 4Bake for 10 minutes so that base is half cooked.

Step 5Remove from oven and leave oven on.

Step 6Topping: Sift flour and sugar into a large bowl. Add remaining ingredients and mix well.

Step 7Pour the mixture over the base.

Step 8Bake for another 25-30 minutes, until golden brown and firm to touch.

Step 9Cut into squares and serve warm or cold.
Recipe Notes
You could use chopped glace cherries instead of sultanas or currants or bit of both. You could even put custard over it and use it as a dessert or whipped cream.
