Ingredients

  • 1 cup self-raising flour sifted
  • 1/2 cup sugar
  • 1/2 cup desiccated coconut
  • 125 g butter melted

Topping

  • 1/2 cup desiccated coconut
  • 1/4 cup self-raising flour
  • 1/2 cup sugar
  • 1/2 cup sultanas
  • 1/2 cup (crushed) canned pineapple drained
  • 2 egg lightly beaten

Method

  • Step 1
    Preheat oven to 180C. Grease and line an 18 cm x 28 cm slice tin.
  • Step 2
    Base: In a large bowl, combine sifted flour, sugar and coconut.
  • Step 3
    Stir in the butter and press mixture into prepared tin.
  • Step 4
    Bake for 10 minutes so that base is half cooked.
  • Step 5
    Remove from oven and leave oven on.
  • Step 6
    Topping: Sift flour and sugar into a large bowl. Add remaining ingredients and mix well.
  • Step 7
    Pour the mixture over the base.
  • Step 8
    Bake for another 25-30 minutes, until golden brown and firm to touch.
  • Step 9
    Cut into squares and serve warm or cold.
Recipe Notes
You could use chopped glace cherries instead of sultanas or currants or bit of both. You could even put custard over it and use it as a dessert or whipped cream.
