Ham and pineapple enchiladas with a creamy tomato sauce served with sour cream.
Ingredients
- 600 g shaved ham (deli)
- 400 g canned pineapple
- 500 g parmigiano cheese
- 500 g tasty cheese grated
- 500 g mozzarella
- 4 tsp cream
- 1 packet enchilada tortillas
- 1/2 tbs sour cream
Method

Step 1Place approximately 4 slices of ham in the middle of each enchilada.

Step 2Add 5 pieces pineapple and half cup tasty cheese.

Step 3Roll and repeat with remaining enchiladas.

Step 4Place in a greased baking dish, cover with parmigiana sauce and grated mozzarella.

Step 5Drizzle with cream. Bake at 180C for 20 minutes or until cheese is golden.

Step 6Serve with sour cream and a green salad.
