Ingredients

  • 600 g shaved ham (deli)
  • 400 g canned pineapple
  • 500 g parmigiano cheese
  • 500 g tasty cheese grated
  • 500 g mozzarella
  • 4 tsp cream
  • 1 packet enchilada tortillas
  • 1/2 tbs sour cream

Method

  • Step 1
    Place approximately 4 slices of ham in the middle of each enchilada.
  • Step 2
    Add 5 pieces pineapple and half cup tasty cheese.
  • Step 3
    Roll and repeat with remaining enchiladas.
  • Step 4
    Place in a greased baking dish, cover with parmigiana sauce and grated mozzarella.
  • Step 5
    Drizzle with cream. Bake at 180C for 20 minutes or until cheese is golden.
  • Step 6
    Serve with sour cream and a green salad.
Recipe Notes

I use Old El Paso enchiladas.
