Ham and Zucchini Risotto

Ingredients

  • 1 tbs olive oil
  • 200 g shaved ham (deli) chopped
  • 1 leek thinly sliced trimmed washed
  • 1 garlic clove crushed
  • 1 cup arborio rice
  • 2 cups chicken stock (liquid)
  • 185 ml evaporated milk
  • 1 zucchini chopped small
  • 1/2 cup frozen peas
  • 1/2 cup parmesan cheese grated

Method

  • Step 1
    Heat oil in a large saucepan on high. Sauté ham, leek, celery and garlic for 4-5 minutes until leek is tender.
  • Step 2
    Add rice and cook, stirring for 1 minute, to coat in oil.
  • Step 3
    Stir in the stock and evaporated milk. Bring to the boil.
  • Step 4
    Reduce heat to low and simmer, stirring, for 15-20 minutes, until rice is tender.
  • Step 5
    Stir in zucchini and peas. Cook for a further 5 minutes.
  • Step 6
    Stir Parmesan through. Season to taste.
  • Step 7
    Serve sprinkled with extra Parmesan.
Recipe Notes

I add the zucchini earlier so that it is softer.

I also like to add corn. You can also add other vegetables. I use bacon instead of ham.
