Ingredients

  • 6 eggs lightly beaten
  • 2 cups self-raising flour
  • 1 tbs caster sugar
  • 30 g butter
  • 3/4 cup light milk
  • 1/4 cup tomato paste
  • 175 g shaved ham (deli) cut into strips thin
  • 1 cup low-fat cheddar cheese coarsely grated

Method

  • Step 1
    Preheat oven to 200C (180C fan forced). Oil a 19 cm x 29 cm slice pan.
  • Step 2
    Cook egg in an oiled, medium frying pan over low heat, stirring constantly, until scrambled.
  • Step 3
    Sift flour and sugar into a medium bowl. Rub in butter.
  • Step 4
    Stir in milk, mix to a soft, sticky dough. Knead dough on a floured surface. Roll dough to 30 cm x 40 cm shape.
  • Step 5
    Spread tomato paste over dough. Sprinkle with ham, top with egg and finally sprinkle with cheese.
  • Step 6
    Starting from long side, roll the dough firmly, then trim edges. Cut roll into 12 slices, place pinwheels, cut-side up, in a single layer, in pan.
  • Step 7
    Bake for approximately 30 minutes.
  • Step 8
    Serve pinwheels warm.
