This is an excellent recipe to serve to guests for nibblies.
Ingredients
- 6 eggs lightly beaten
- 2 cups self-raising flour
- 1 tbs caster sugar
- 30 g butter
- 3/4 cup light milk
- 1/4 cup tomato paste
- 175 g shaved ham (deli) cut into strips thin
- 1 cup low-fat cheddar cheese coarsely grated

Step 1Preheat oven to 200C (180C fan forced). Oil a 19 cm x 29 cm slice pan.

Step 2Cook egg in an oiled, medium frying pan over low heat, stirring constantly, until scrambled.

Step 3Sift flour and sugar into a medium bowl. Rub in butter.

Step 4Stir in milk, mix to a soft, sticky dough. Knead dough on a floured surface. Roll dough to 30 cm x 40 cm shape.

Step 5Spread tomato paste over dough. Sprinkle with ham, top with egg and finally sprinkle with cheese.

Step 6Starting from long side, roll the dough firmly, then trim edges. Cut roll into 12 slices, place pinwheels, cut-side up, in a single layer, in pan.

Step 7Bake for approximately 30 minutes.

Step 8Serve pinwheels warm.
