Ingredients
- 6 cup rolled oats
- 2 tsp ground cinnamon
- 4 cup shredded coconut
- 2 cup pecans chopped
- 1 cup sunflower seeds
- 1 cup coconut oil
- 1 cup honey
- 1 tbs vanilla essence
- 2 cup raisins
Method

Step 1Preheat oven to 165C. In a large bowl, combine, oats, cinnamon, coconut, pecans and sunflower seeds.

Step 2In a small saucepan, gently warm coconut oil and honey until just melted but not hot. Remove from heat and add vanilla.

Step 3Stir honey mixture into the oat mixture.

Step 4Pour into a large baking tray and bake for 1 hour and 15 minutes until oats are golden brown. Stir occasionally while cooking for even browning.

Step 5Remove from oven and add raisins.

Step 6Cool and store in an airtight container.

Recipe Notes
Each serving contains about 1 tablespoon of coconut oil. I add chopped dried apricots and cranberries at the end, and also almonds and walnuts before cooking. You can add any other dried fruit or nuts and seeds that you like. This makes 14 1 cup servings. Use old-fashioned rolled oats and shredded or flaked coconut.
