Add herbs of choice, such as mint or coriander, for a gourmet aioli. Very versatile.
Ingredients
- 2 garlic clove *to taste
- 1 tsp white sugar
- 1 tbs lemon juice
- 1 tsp dijon mustard
- 1 pinch salt and pepper
- 1 egg yolks
- 1/3 cup olive oil
Method

Step 1In a blender, process all ingredients except oil, until a smooth paste.

Step 2While blender is running, slowly add the oil in a thin steam.

Step 3Continue to blend until combined and thickened.

Recipe Notes
Garlic cloves can be roasted for a sweeter flavour. Adding 2 tablespoons of mint to the aioli is a perfect condiment to lamb burgers. Coriander will add a distinctive Asian flavour to this aioli.
