Ingredients

  • 2 garlic clove *to taste
  • 1 tsp white sugar
  • 1 tbs lemon juice
  • 1 tsp dijon mustard
  • 1 pinch salt and pepper
  • 1 egg yolks
  • 1/3 cup olive oil

Method

  • Step 1
    In a blender, process all ingredients except oil, until a smooth paste.
  • Step 2
    While blender is running, slowly add the oil in a thin steam.
  • Step 3
    Continue to blend until combined and thickened.

Recipe Notes
Garlic cloves can be roasted for a sweeter flavour. Adding 2 tablespoons of mint to the aioli is a perfect condiment to lamb burgers. Coriander will add a distinctive Asian flavour to this aioli.
