Ingredients

  • 200 g dark cooking chocolate
  • 200 g butter
  • 4 egg
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • 1 1/3 cup plain flour
  • 1/4 cup cocoa powder
  • 3/4 cup dark chocolate chips
  • 3/4 cup milk chocolate chips
  • 1/3 cup white chocolate chips
  • 2 tbs drinking chocolate powder

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Brush a shallow 20 cm x 30 cm pan with oil and line with baking paper.
  • Step 3
    Melt the cooking chocolate and butter in a heatproof bowl over a saucepan of simmering water, or in the microwave. Leave to cool slightly.
  • Step 4
    Beat the eggs, sugar and vanilla essence with an electric mixer. Add to the chocolate mixture.
  • Step 5
    Sift flour and cocoa. Add to the chocolate mixture.
  • Step 6
    Stir with a wooden spoon until combined.
  • Step 7
    Combine dark and milk choc chips in a bowl, then add half to the chocolate mixture.
  • Step 8
    Add all the white choc chips to the chocolate mixture and stir to combine.
  • Step 9
    Pour the chocolate mixture into the prepared pan. Sprinkle with the remaining choc chips and press lightly with the bottom of a spoon.
  • Step 10
    Bake for 45 minutes. Allow to cool completely, then refrigerate until firm.
  • Step 11
    Cut into squares then dust with drinking chocolate.
