Ingredients

  • 1 cauliflower
  • 1 cup plain yoghurt
  • 1 clove garlic
  • 1 egg
  • 1 tsp salt
  • 1 cup plain flour
  • 1 tsp chilli flakes
  • 5 g fresh dill chopped
  • 2 L water
  • 1/2 cup oil

Method

  • Step 1
    In a large saucepan boil 2 litres of water. Cut the cauliflower into florets. Steam the florets in the boiling water for about 8-10 minutes. The cauliflower should be firm. Set aside to cool.
  • Step 2
    Beat the egg in a large bowl and dip the florets into the egg and then flour.
  • Step 3
    Heat the oil and fry the florets on each side until golden brown.
  • Step 4
    To make the garlic yoghurt: mix the yoghurt, crushed garlic and salt until you have a smooth consistency. You may add 2 tablespoons of water and mix.
  • Step 5
    Serve the cauliflower as a side in individual bowls. Drizzle garlic yogurt and garnish with chopped dill and chilli flakes (optional)
