Ingredients

  • 2 salmon fillet
  • 1 1/2 cup rice cooked
  • 1 leek thinly sliced
  • 1 cup silverbeet torn
  • 1 tsp curry powder
  • 200 ml cream
  • 1 garlic clove crushed
  • 1/2 cup cheese grated

Method

  • Step 1
    Saute leek in small frypan for 5 minutes over gentle heat, then add silverbeet and cook for a further 5 minutes or until just tender.
  • Step 2
    Add rice, curry powder and salt and pepper. Mix to combine.
  • Step 3
    Arrange in a casserole dish, place salmon on top.
  • Step 4
    Mix cream with garlic, pour over salmon then sprinkle with cheese.
  • Step 5
    Bake for approximately 30 minutes at 180C (fan-forced) or longer if well done is preferred.

  • 1 casserole dish
Recipe Notes

We prefer this just as it is, but it would be nice with garlic bread and salad. Spinach can substitute silverbeet leaves.
