A very easy, popular and fabulousl tasty dessert.
Ingredients
- 125 g fresh strawberries halved hulled
- 62 1/2 g fresh blueberries
- 1/4 cup caster sugar
- 1 tsp vanilla essence
- 1 cup water
- 2 tsp cornflour
Crepes
- 1/2 cup plain flour
- 1 tbs caster sugar
- 20 g butter melted
- 1 tsp lemon rind grated optional
- 2 egg
- 3/4 cup evaporated milk
- 1 oil spray
Method

Step 1Berry sauce: Place the berries, vanilla, sugar and water in saucepan and bring to the boil. Reduce to a low heat and cook for 3 or 4 minutes until the sugar dissolves.

Step 2Thoroughly mix cornflour into 1 tablespoon water to make a paste, and stir into the berry sauce. Simmer and stir continually until it thickens, cover and remove from heat.

Step 3Crepes: Sift flour into a bowl and stir in sugar.

Step 4Combine butter, lemon rind eggs, and evaporated milk in a jug. Whisk into flour and stir until smooth.

Step 5Grease an omelette pan with melted butter, and place over a medium heat.

Step 6Pour in ¼ cup of batter and tilt pan so it makes a thin disc. Cook for about 2 minutes, then flip and cook other side until golden.

Step 7Remove from pan and transfer to a low oven to keep warm, while remaining crepes are cooked.

Step 8Serve crepes rolled or folded, add the berry sauce and 2 scoops of vanilla ice-cream.

Recipe Notes
Raspberries and blackberries may be used instead of strawberries and blueberries.
