Ingredients

  • 500 g pork stir-fry strips
  • 2 tbs green Thai curry paste
  • 1 red capsicum diced
  • 2 cup green beans chopped
  • 270 ml coconut milk
  • 1 tbs dried basil leaves

Method

  • Step 1
    Heat 2 teaspoons oil in a frying pan over medium-high heat.
  • Step 2
    Cook pork or chicken strips for 6-8 minutes. Remove and set aside.
  • Step 3
    Add a little more oil and cook the curry paste for 1 minute.
  • Step 4
    Add capsicum and beans and cook, stirring, for 2 minutes.
  • Step 5
    Return strips and stir through coconut milk with half a cup of water. Simmer for 3 minutes.
  • Step 6
    Remove from heat and stir through basil.

Equipment

  • 1 frying pan
Recipe Notes
Serve in bowls with rice. Use pork or chicken strips and green beans or peas.
