This can be made using pork or chicken.
Ingredients
- 500 g pork stir-fry strips
- 2 tbs green Thai curry paste
- 1 red capsicum diced
- 2 cup green beans chopped
- 270 ml coconut milk
- 1 tbs dried basil leaves
Method

Step 1Heat 2 teaspoons oil in a frying pan over medium-high heat.

Step 2Cook pork or chicken strips for 6-8 minutes. Remove and set aside.

Step 3Add a little more oil and cook the curry paste for 1 minute.

Step 4Add capsicum and beans and cook, stirring, for 2 minutes.

Step 5Return strips and stir through coconut milk with half a cup of water. Simmer for 3 minutes.

Step 6Remove from heat and stir through basil.

- 1 frying pan
Recipe Notes
Serve in bowls with rice. Use pork or chicken strips and green beans or peas.
