I get asked to cook this simple Laksa over and over again.
Ingredients
- 2 tsp vegetable oil
- 2 tbs laksa paste
- 1/2 cup shallots chopped
- 1 lemon juiced zested
- 350 ml coconut cream
- 2 cups chicken stock (liquid)
- 75 g 2-minute noodles
- 500 g white fish fillet cut into pieces
- 1/2 cup coriander chopped
Method

Step 1Heat oil in large saucepan over medium heat, add Laksa paste and shallots and saute for 2 minutes.

Step 2Add lemon zest and juice, coconut cream and stock, bring to boil.

Step 3Add noodles and fish and cook over medium heat for 3-5 minutes.

Step 4Stir in coriander and serve.
