I get asked to cook this simple Laksa over and over again.

Ingredients

  • 2 tsp vegetable oil
  • 2 tbs laksa paste
  • 1/2 cup shallots chopped
  • 1 lemon juiced zested
  • 350 ml coconut cream
  • 2 cups chicken stock (liquid)
  • 75 g 2-minute noodles
  • 500 g white fish fillet cut into pieces
  • 1/2 cup coriander chopped

Method

  • Step 1
    Heat oil in large saucepan over medium heat, add Laksa paste and shallots and saute for 2 minutes.
  • Step 2
    Add lemon zest and juice, coconut cream and stock, bring to boil.
  • Step 3
    Add noodles and fish and cook over medium heat for 3-5 minutes.
  • Step 4
    Stir in coriander and serve.
