Ingredients

  • 600 g fish fillets deboned frozen
  • 425 g canned crushed tomatoes
  • 300 ml cream
  • 1 bunch parsley chopped
  • 1 pinch curry powder *to taste

Method

  • Step 1
    Place frozen fish in lightly greased oven dish.
  • Step 2
    Sprinkle some salt and pepper on top.
  • Step 3
    Heat tomatoes, cream and parsley together in a sauce pan until simmering.
  • Step 4
    Add curry, salt and pepper.
  • Step 5
    Pour sauce over fish and bake at 200C for 45-60 minutes.
  • Step 6
    Serve with rice and a plain salad.

Recipe Notes

Very nice, quick and easy to prepare. I have made it with evaporated skim milk to make it low fat and it tasted good as well. I used canned crushed tomatoes with herbs.
