A one pot mixture, put into ready made puff pastry. My family loves this pie.
Ingredients
- 500 g chicken breast fillet diced
- 1 onion thinly sliced
- 2 garlic minced
- 1/2 capsicum diced
- 1 carrot diced
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1/2 cup frozen green beans
- 2 cup water
- 1 cup chicken stock (liquid)
- 3/4 cup red lentils
- 3 sheets puff pastry
- 1 potato
Method

Step 1Preheat oven to 180C.

Step 2In a large saucepan, brown onion in small quantity of oil, add garlic and chicken.

Step 3Add remaining ingredients, except pastry and potato.

Step 4Bring to the boil, simmer until vegetables and lentils are soft.

Step 5Thicken with potato, if needed.

Step 6Line pie dish with pastry, using the 2nd sheet to fill in any gaps.

Step 7Cook pastry base as per packet directions.

Step 8Place vegetable mixture into base and cover with pastry.

Step 9Return to oven until golden.
Recipe Notes
My husband won't eat anything that resembles soup or stew, but absolutely loves this and requests it often.
It is also a great way to use lentils and I'm sure would be nice without the chicken as a meat-free alternative.
I sometimes use cornflour and water instead of potato to thicken the vegetable mixture.
