A very simple method for quince jelly.
Ingredients
- 2 1/2 kg quince
- 2 kg white sugar
- 3 L water
Method

Step 1Place everything into a large, heavy based pot.

Step 2Bring to the boil, stirring occasionally.

Step 3Boil gently for 3 hours.

Step 4Remove scum as it forms.

Step 5Jelly is ready when a little bit placed on a cold saucer jells.

Step 6Remove quinces carefully with a slotted spoon.

Step 7Pour jelly into warm, sterilised jars and seal.

Recipe Notes
The quinces, when removed from the jelly, make a beautiful but very rich dessert. They are delicious served with thick cream.
