A very simple method for quince jelly. - Kaye

Ingredients

  • 2 1/2 kg quince
  • 2 kg white sugar
  • 3 L water

Method

  • Step 1
    Place everything into a large, heavy based pot.
  • Step 2
    Bring to the boil, stirring occasionally.
  • Step 3
    Boil gently for 3 hours.
  • Step 4
    Remove scum as it forms.
  • Step 5
    Jelly is ready when a little bit placed on a cold saucer jells.
  • Step 6
    Remove quinces carefully with a slotted spoon.
  • Step 7
    Pour jelly into warm, sterilised jars and seal.

Recipe Notes
The quinces, when removed from the jelly, make a beautiful but very rich dessert. They are delicious served with thick cream.
