Easy Microwave Risotto

This is an easy and quick risotto that you can make using anything you have on hand. It is great for a last minute dinner.

Ingredients

  • 50 g butter
  • 1 onion finely chopped
  • 200 g bacon rashers chopped
  • 1 cup arborio rice
  • 2 cup mixed vegetables diced
  • 1 1/2 cup vegetable stock (liquid)
  • 1/2 cup milk
  • 4 tbs parmesan *to serve

Method

  • Step 1
    Place the onion, bacon, and butter in a large microwave dish. Microwave for 4 minutes on high.
  • Step 2
    Add the rice, vegetables, stock and milk.
  • Step 3
    Cook for 20 minutes on high, stirring after 10 minutes.
  • Step 4
    Let sit for 5 minutes.
  • Step 5
    Stir Parmesan through, and serve.

Equipment

  • 1 1000 watt microwave
Recipe Notes

I use diced bacon from the deli and frozen peas, corn and carrot. Chicken or ham can be used. Also you can leave out the milk, and use 2 cups of vegetable stock instead. I cook this in a 1000W microwave.
