A quick, fruit cake. I use a butter mix base for all my cakes, minus fruit. It can handle being mixed by a food processor. Great for cupcakes.
Ingredients
- 200 g self-raising flour
- 120 g soft butter
- 160 g caster sugar
- 3 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 cup sultanas
- 1/2 cup cherries
Method

Step 1Preheat oven to 180C.

Step 2Mix dry ingredients together. Add fruit and then wet ingredients.

Step 3Pour into a greased loaf tin and bake for 45-60 minutes.

I also add almond flakes on top before baking. My husband takes buttered slices to work everyday.
To stop fruit from sinking, mix in some flour first to coat fruit.
