A quick, fruit cake. I use a butter mix base for all my cakes, minus fruit. It can handle being mixed by a food processor. Great for cupcakes. - mrsajl

Ingredients

  • 200 g self-raising flour
  • 120 g soft butter
  • 160 g caster sugar
  • 3 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 cup sultanas
  • 1/2 cup cherries

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Mix dry ingredients together. Add fruit and then wet ingredients.
  • Step 3
    Pour into a greased loaf tin and bake for 45-60 minutes.

  • 1 loaf pan
Recipe Notes

I also add almond flakes on top before baking. My husband takes buttered slices to work everyday.

To stop fruit from sinking, mix in some flour first to coat fruit.
