My version of curried snags. It's a bit different from how I've seen others do it but it's quick, easy and I love it.
Ingredients
- 8 sausage
- 5 potato chopped into pieces skin on washed
- 2 zucchini chopped into pieces
- 1/2 broccoli chopped into pieces medium
- 1 onion roughly chopped
- 2 carrot chopped into pieces medium
- 1 cup frozen peas and corn
- 1 cup fresh beans
- 2 tbs Worcestershire sauce
- 2 tbs curry powder
- 1 beef stock cube
- 1 fresh red chilli chopped hot
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 3 tbs cornflour
- 1 pinch seasoning *to taste
Method

Step 1Bring sausages to boil in enough water to cover them.

Step 2Remove sausages and add vegetables to water.

Step 3Add Worcestershire sauce, curry powder, stock, chilli, cayenne, paprika, salt and pepper. Simmer gently until vegetables soften.

Step 4Slowly add cornflour combined with water, stir to thicken and continue to simmer.

Step 5Return sausages to saucepan, either sliced or whole and reheat.
