This is a great cake to make in a hurry with ingredients you are most likely to have handy without a special trip to the shop! Serve warm with a dollop of cream for morning/afternoon tea, or with ice cream for a yummy dessert. Use fresh or tinned pie apples.
Ingredients
- 150g butter melted
- 2 cups stewed apple
- 1 cup sugar
- 2 eggs
- 2 cups self-raising flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1/2 cup mixed nuts chopped optional
Method

Step 1Place all ingredients into a bowl. Stir until well combined.

Step 2Add nuts if desired.

Step 3Pour mixture into a springform tin and bake for 40-45 minutes at 140C.
Recipe Notes
It takes about 15 minutes to stew apples.
You can use fresh or tinned apples. If you don't have any apples to stew, try this cake with apricots and a little coconut in place of the cinnamon. You can also use plums, or whatever fruit you have handy, fresh or tinned.
