This simple recipe slow-roasts beef to create succulent results every time. Boasting a couple of secret ingredients in the marinade, this roast beef recipe will melt in the mouth.
Ingredients
- 1 beef roast
- 1/4 cup vegetable oil
- 1 tbs grainy mustard
- 1 tbs strawberry jam
- 2 tsp garlic paste
Method

Step 1Preheat oven to 210C.

Step 2Mix mustard, jam and garlic together in a cup and baste roast all over with a spoon.

Step 3Coat the bottom of a roasting pan with oil.

Step 4Place roast into pan and bake for approximately 20 minutes to seal the outside.

Step 5Reduce temperature to 140-150C and slow roast meat for approximately 4-5 hours. For rarer beef, cook for less time.

Step 6Remove from oven and let stand for 15 minutes.
Recipe Notes
You can use this recipe to roast lamb but I put about a teaspoon of rosemary into the marinade as well. I always make my gravy with pan bits and gravy powder, red wine, Vegemite etc. but discard the oil from the pan.
Should you cover beef with foil when slow-roasting?
There's no need to cover this roast beef as the low temperature means it's not at risk of burning.
