Described by a close friend, "like Chiko Rolls but better!" If you like spring rolls, but don't like the vegetable content in them, try these.
Ingredients
- 1 chicken breast fillet minced
- 1 pinch salt and pepper
- 1 pinch cayenne pepper
- 2 tsp curry powder
- 1/2 tsp Tabasco
- 310 g canned corn
- 125 g cream-style canned corn
- 1 egg beaten
- 150 g tasty cheese julienned
- 24 rice paper sheets
- 500 ml peanut oil
Method

Step 1Fry the chicken breast until lightly cooked, adding spices and tabasco sauce during cooking.

Step 2Remove from heat and allow to cool.

Step 3Add corn kernels and creamed corn, and mix thoroughly.

Step 4Add more spice at this stage if desired.

Step 5Add egg to mixture.

Step 6Wet and soften rice paper as per packet instructions.

Step 7On each, place a strip of cheese with chicken mixture (approximately 1 tablespoon per piece), tuck in ends and roll, set aside.

Step 8Heat oil in a deep frypan until correct temperature for frying.

Step 9Place rolls in oil and fry, turning once or twice until golden brown.

Step 10Drain on paper towels and serve hot.
Recipe Notes
Don't overfill the rice paper or it will burst. Oil must be hot before placing rolls in it.
